Solotel Reboots Rooty Hill Landmark as ‘The Woodstock’

In one of Western Sydney’s most significant pub redevelopments in recent memory, hospitality giant Solotel is giving the Carousel Inn in Rooty Hill a full-scale transformation – with a new name, new chef and a bold new format aimed squarely at families, locals and functions.  

Renamed The Woodstock, the venue is undergoing a multi-million dollar refurbishment that will deliver a 1,000-seat entertainment and dining destination ahead of its grand reopening in late September – just in time for the NRL Grand Final and school holiday rush.  

Solotel, the group behind venues like The Golden Sheaf in Double Bay and The Albion Hotel in Parramatta, acquired the Carousel Inn back in 2021 for $9.9 million and has spent the past few years consulting with patrons and locals on how to shape the new era of the property. 

The result is a family-friendly, 2,000 sqm mega-pub designed to be equal parts neighbourhood hangout and event-ready function centre – catering to everything from midweek dinners to weddings and corporate events.  

Key features of The Woodstock include:  

  • 250-person function and event space with full audiovisual capabilities 
  • Garden bar oasis with cocktails, leafy surrounds and house-made slushies  
  • Sports bar with multiple TV screens, bar snacks, lounge seating and a fireplace  
  • Indoor and outdoor playgrounds, climbing wall and ping pong tables for kids 
  • Spacious bistro and two terraces designed for large-group dining  
  • Major food overhaul led by Steve Koenig, ex-Marsden Brewhouse
